Spaghetti Sauce w/ Veggies

This is a delicious way to add a few more veggies into your meal. Just saute up a few veggies, add in your favorite jar of sauce. Let simmer and cook your favorite GF pasta. A nice brown rice spaghett was used here. A simple meal for those busy evenings.  Enjoy!


Spaghetti Sauce w/ Veggies
Makes 4-6 servings
Optional: You can cook up 1 lb ground beef, with a bit of onion, salt and pepper in advance, and add it into the sauce when you add the jar of spaghetti sauce for a nice twist!
Dice the following veggies:
¼ - ½ red onion
¼ - ½ red bell pepper
¼ - ½ green bell pepper
½ - 1 celery stalk
½ - 1 zucchini (optional)
3-4 cloves garlic, minced
Heat over medium heat in a saucepan with lid (a wide, low saucepan works well):
1-2 Tbsp olive oil
Add in the veggies, and the following spices:
1 – 2 tsp dried oregano
1 – 2 tsp dried basil
½ tsp salt
½ tsp pepper
Cook until tender.  Then add:
1 jar spaghetti sauce (I prefer Classico)
OR add
1 can tomato sauce and/or chopped tomatoes - add in extra spices listed above, to taste.

Let simmer 30 min – 1 hour.  Serve over brown rice pasta. Sprinkle with parmesan cheese, if desired.
