Ham & Cheese Risotto
Place
in pot:
1 ½ cups Arborio risotto rice
4 cups chicken stock
Bring
to boil, then cover and simmer 18-20 minutes.
Remove
from heat and immediately add:
½ cup fresh mozzarella cheese, chopped
2-4 Tbsp parmesan cheese
2-3 slices deli ham, chopped (I like the nitrate-free
kind)
½ tsp dried parsley or 1 tsp fresh, diced very
small
Add
salt and pepper to taste
Enjoy!
